Alumnus aiming to bring French cuisine to the Pacific Northwest

Jonathan ProvilleJonathan Proville (LGB '01) is the co-founder of a new seafood restaurant set to open in Seattle this October. To help get the project off to a flying start, he and his business partner have been running a Kickstarter campaign that is within a few thousand dollars of reaching its target with three days to go. He's hoping the alumni community can help with the final push.

Jonathan (pictured to the right, from the LGB 1999 Yearbook) attended Ecolint for eight years, from 1992 to 2001, before going on to study Entrepreneurship and International Business at Montreal's McGill University. Following a brief sortie into financial software, he switched gears and joined the food industry, initially writing about the subject for an online magazine.

He later began to cook professionally, most notably at New York's Gramercy Tavern. The flooding of his apartment in the aftermath of Hurricane Sandy prompted him to move to the Pacific Northwest where, after four years cooking at various restaurants, he is now preparing to open L'Oursin.

Along with partner Zac Overman, who brings a wealth of bartending experience to the team, they aim to use locally sourced produce to serve French-influenced cuisine in an up-and-coming district of Seattle. Jonathan says that his days at LGB have certainly had an influence on how the concept has taken shape.

Their Kickstarter campaign, which will provide the support they need to open the doors and survive their first months of operation, is currently $2,500 short of its $25,000 target. Jonathan would appreciate support from former classmates, alumni living in the Seattle area, or anyone that would like to help a fellow Ecolintien get his business off the ground.

We wish him every success with the project. Perhaps an ideal location for a future Seatlle Escalade Dinner?!
